Whole30: Day 18


  • 1 Cup coffee with almond milk
  • Roasted almonds & cashew (I roasted them yesterday with a little bit of salt)


Afternoon snack

  • 1 Cup Coffee with almond milk
  • A piece of Almond Cake (once a baker, always a baker šŸ˜€ ) – see recipe below


Almond Cake

3 eggs
3 cups Almond meal or almond flour
1 1/2 tsp baking soda
2 1/2 cups Fruit pureeĀ (I used some frozen bananas, frozen peaches, and a handful of Medjool dates for extra sweetness – blend everything in a blender or food processor – it doesn’t have to be perfectly blended, a few small chunks here and there are fine)

Preheat oven to 350*F.

Beat the eggs in a mixing bowl. Ā Add the almond meal and fruit puree and mix until well combined. Ā Add the baking soda and mix again. Ā Grease a 8″x8″ square (or a 9″ circle) baking pan. Ā Sprinkle some shredded coconut on the bottom (optional but it makes it easier for the cake to come out of the pan once done). Ā Pour the batter into the baking pan. Ā Sprinkle some slices almond on top (optional). Ā Bake until a toothpick comes out clean from the centre of the cake. Ā (Every oven is different so the toothpick test is the most reliable).

Cool on a cooling rack for at least 10 min. Ā Cut in pieces and serve.
