Whole30: Day 18


Breakfast

  • 1 Cup coffee with almond milk
  • Roasted almonds & cashew (I roasted them yesterday with a little bit of salt)

Lunch

Afternoon snack

  • 1 Cup Coffee with almond milk
  • A piece of Almond Cake (once a baker, always a baker 😀 ) – see recipe below

Dinner


Almond Cake

3 eggs
3 cups Almond meal or almond flour
1 1/2 tsp baking soda
2 1/2 cups Fruit puree (I used some frozen bananas, frozen peaches, and a handful of Medjool dates for extra sweetness – blend everything in a blender or food processor – it doesn’t have to be perfectly blended, a few small chunks here and there are fine)

Preheat oven to 350*F.

Beat the eggs in a mixing bowl.  Add the almond meal and fruit puree and mix until well combined.  Add the baking soda and mix again.  Grease a 8″x8″ square (or a 9″ circle) baking pan.  Sprinkle some shredded coconut on the bottom (optional but it makes it easier for the cake to come out of the pan once done).  Pour the batter into the baking pan.  Sprinkle some slices almond on top (optional).  Bake until a toothpick comes out clean from the centre of the cake.  (Every oven is different so the toothpick test is the most reliable).

Cool on a cooling rack for at least 10 min.  Cut in pieces and serve.
