It’s been so hot here. I don’t do very well in the heat. I am a winter person 😀 It’s easier to put on an extra sweater than to melt and not be able to do anything about it. I seriously think that people who say it rains too much in Vancouver are referring to Vancouver of the 20th century. Because Vancouver of the 21st century is drier than the prairies. 😀 It hasn’t rained (I mean real rain, not drizzle) in months. It’s crazy! We have water restrictions all over the province, huge wild fires everywhere, people losing their homes in a matter of minutes. There are literally towns that have been destroyed. I thought I’d never say this, but I am praying for rain! I miss the rain! Where is it? If you have any rain in your part of the world, please send some our way 😀 Thank you!
Here’s my menu for today:
Breakfast
- 1 cup coffee with almond milk
- 1 piece Almond Cake
Snack through the day: Oven roasted almonds and cashew
Lunch
- A portobello mushroom with sautéed veggies and kale
- A piece of Almond Cake
Dinner
- A bowl of salad – cucumber, cherry tomatoes, an orange bell pepper with balsamic vinegar and Frank’s Red Hot sauce
- Pizza with cauliflower crust
Cut the cauliflower in small pieces and steamed them. Drained the water as much as possible and mashed it with hand masher. Added 3 beaten eggs, salt, and 3 tbsp coconut flour to absorb the rest of the water. Spread it in a thin layer on a pizza baking sheet and bake until golden. Place all your toppings – I put tomatoes, tuna, hot sauce and some dijon mustard – all I had left in the fridge. Bake until done.
If you wonder where the rain has been hiding all summer I can tell you : in England. We had such a rainy summer 😦
Oh wow. That’s too bad 😦 Our summer was so unusual – it’s never been that hot and dry. We would take some of your rain and send you some sunshine 😉
yes please. Here it’s been rainy, rainy, rainy and grey 😦 a few days of heat wave at the beginning then rain.
Cauliflower base sounds great! Definitely going to try this out!

It’s so delicious! All recipes call for cheese in the crust which keeps it more together. But with the Whole30, I can’t have cheese. So I added an extra egg and coconut flour. The crust was perfect! 🙂
